Continuing on with my Recipes-I'm-Currently-Loving series: almond bars. Whenever my dad had a rough day at work, he would always come home to fresh almond bars that my mom made as a surprise. These became the perfect pick-me-up and something that I regularly make to fix any bad day or make any good day a great day. This recipe is super simple and, to paraphrase my favorite cartoon ghost chef, anyone can bake. I hope these lift you up if you need it or keep your spirits high if you're already content.

Ingredients:

2 cups sugar

4 eggs

2 cups flour

1/4 tsp salt

2 1/2 tbsp almond extract

1 cup butter/2 sticks margarine melted

  1. Preheat oven to 325

  2. Beat eggs until thick and lemon colored

  3. Add sugar gradually and continue beating

  4. Add melted butter and almond extract

  5. Add flour and salt

  6. Bake for 35 minutes, or until a toothpick comes out clean!
