Brown Sugar Cinnamon Pop-Tart Cookies
The Brown Sugar Cinnamon Pop-Tarts were an absolute staple for me growing up. I'll be honest, they were a staple for me all the way through college graduation. Living in a place where it is too hot to go out on a daily basis, I have developed some new hobbies, mainly baking. When I came across the recipe for these Pop-Tart cookies I knew that there was no one more equipped to bake them than me. After deciding that these were a smashing success, I simply have to share the recipe with every single person that will listen to me for the rest of my life.

Cookies:
1/2 cup unsalted butter
1/4 cup granulated sugar
1/2 cup + 2 additional tbsp brown sugar
1 large egg at room temperature
1 1/2 tsp vanilla extract
2 1/4 cup all-purpose flour
1 1/2 tbsp cornstarch
1/2 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
Brown Sugar Filling:
3 tbsp butter, softened
1/2 cup brown sugar
1 tbsp flour
1/2 tsp cinnamon
Glaze:
1 1/2 tbsp melted butter
1/2 cup powdered sugar
1/2 tsp cinnamon
1 tbsp milk
Preheat oven to 350
In a large bowl, add the softened butter, granulated sugar, and brown sugar. Whisk, or use a hand mixer, until combined.
Add the egg and vanilla and mix well.
In a different bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon, and cornstarch. It is important not to add these directly to the large bowl but to mix them separately before combining.

Pour the wet ingredients into the dry ingredients and gently fold together with a rubber spatula. This is best done by hand and not with an electric mixer. Set aside.
In a small bowl, combine all the filling ingredients and mix well.
Scoop 3* tbsp of cookie dough, flatten, and fill with 2 tsp of brown sugar cinnamon filling. Dough may be a little crumbly and 'dry'. *Play around with the size! Cookies can be made bigger or smaller depending on preference. Just try your best to keep the filling to cookie ratio the same!
Fold the cookie dough around the filling, gently squishing the sides into a ball so that no filling will leak out during baking.
Bake for 10-11 minutes, or until it looks set and the edges are golden brown. Time may vary depending on your oven.
While cookies are baking, mix the glaze ingredients in a small bowl and let set.
Once cookies are done, let cool at least 15 minutes before adding the glaze. The glaze will harden as it cools.
I hope these tasty treats bring about a feeling of warmth and childhood nastalgia for you. Enjoy!
